Oven roasted Vegetables
Pumpkin in chunks
Sweet potato in chunks
Onions in quarters
Green beans
Baby marrow, chopped
Peppers,  chopped
Rosemary herb
Drizzle with olive oil,  salt,   pepper and rosemary.

Roast at 180 C for 35 min

 

Green beans and peppers
Green beans,   cooked
1 red bell pepper,   sliced in strips
1 yellow or orange bell pepper, sliced in strips
1 small onion,  halved and sliced
2 cloves garlic, minced
2 tablespoons coconut oil
Salt and pepper
Melt coconut oil in a large skillet over medium-low heat.
Add cooked green beans,  peppers,  onion and garlic.
Cook slowly, stirring until peppers are tender
-  about 8 to 10 minutes.
Add salt and pepper to taste.

 

Sweet Potato / Cauliflower Mash
Sweet potato OR Cauliflower
Butter
Salt &pepper
Steam  peeled,  cubed sweet potato
Mash with a fork,  add a knob of butter.
Season to taste

 

Marinated Vegetables
Green, yellow Peppers
Mushrooms
Baby marrow
1 cup water
4 teaspoons white wine vinegar
1 tablespoon tarragon leaves,  chopped
2 tablespoons parsley leaves,  chopped
2 cloves roasted garlic
1/2 lemon,  juiced
4 tablespoons extra virgin olive oil,  cold pressed
Simmer vegetables in water,  white vinegar for 15 min.
Drain well and cool

Add tarragon,  parsley,  garlic,  lemon juice and olive oil to vegetables

Season to taste

Store in airtight jar and keep refrigerated.

 

Cheesy vegetable bake
Spinach, washed and shredded
Mushrooms,  sliced
¼  cup grated Mozzarella
¼ cup low fat feta cheese
Italian or pizza spice
Steam spinach and season
Sauté mushrooms and season
Layer spinach,  mushrooms and ½ cheeses in oven proof dish.
Top with remainder feta and mozzarella portions.
Grill until golden brown.

 

Marinated Vegetable Kebabs
Mushrooms
Baby marrow
Peppers – yellow,  green, red
Onion
Baby tomato
3 Tablespoons olive oil
3 Tablespoons lemon juice
2 tablespoons tomato paste
1 ½ teaspoons honey
1 clove mashed garlic
Salt and pepper
Thread chunks of vegetables onto  skewers
Mix together remaining ingredients and brush onto vegetables
Grill in non-stick pan or in oven – basting when necessary.

 

Sweet Potato Wedges
Sweet potato
Salt
Olive oil
Steam sweet potato
Lay on a baking sheet
Drizzle with a little olive oil and sprinkle with salt
Bake until crispy.
